Fun Photo Friday

This is the post where I will be sharing all
the pictures I took on my iphone during the week.
I have been taking more and more pictures on my
due to the fact it is a lot more portable
and quick to pull out and shoot.

Apple Cinnamon Rolls

I was in the mood to bake with apples today
and I thought to myself there must be something on pinterest 
that using both apples and cinnamon rolls.
I came across this idea from Six Sisters' Stuff
but they used pie filling in a can which I did not have.
So I looked up an easy Apple Pie Filling recipe 
and found one at Food.com.

Ingredients for filling:
4 cups diced apples
2 tablespoons lemon juice
1/2 cup sugar
{depending on sweetness of apples, to taste}
2 -4 tablespoons cornstarch
1/2 teaspoon nutmeg, to your taste
1 teaspoon cinnamon, to your taste
1 cup apple juice or 1 cup water
{Try to use juice because it adds to the flavor}

Directions:
1. Sprinkle lemon juice over apples in saucepan.
2. Mix next four ingredients together and add to apples.
3. Mix well.
4. Add very hot juice to pan, 
{I microwave juice for 2 minutes}
 cook, stirring constantly until thickened.
5. Remove from heat and cool.


Next I put premade cinnamon rolls in a round dish 
and added the apples on top.


I baked the cinnamon rolls for 15 minutes.
I checked to make sure the rolls were done and
they were a little doughy still so put them in for another 5 minutes.
When they were done I added the frosting that came 
with the  cinnamon rolls.
Let cool and serve!

Mini Apple Muffins

I have plenty of apples in the house after
picking 10 lbs on Wednesday.

Today I told myself I would make some apple muffins.
I had a recipe saved on pinterest from Skinny Mom's Kitchen.

Ingredients:
1 cup whole wheat Flour
{I used 2 cups instead of one of each of whole wheat flour}
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
2 large eggs
1/2 cup packed brown sugar
1/2 cup 1% milk
{I used nonfat}
1 cup applesauce
{I used homemade stove top applesauce}
1 cup finely chopped apples
* I also added 2 T. ground flaxseed

Directions:
Preheat oven to 350 degrees
Step 1. Combine flours, baking powder, baking soda, salt, and cinnamon in a bowl and set aside.
Step 2. Using a hand or stand mixer combine eggs, brown sugar, milk, and applesauce.
Step 3. Slowing combine dry ingredients into wet ingredients.
Step 4: Fold in apples.

Spray muffin pan with cooking spray and fill cups.
Since I was using mini muffin tin I used a tablespoon in each one. 
 Cook about 13 minutes or until toothpick is clean.

The kids had about half of them eaten by dinner time!



Apples, Apples, Apples

Last Wednesday I took Jordan and Cohen to 
Bellewood Acres to go apple picking.
When we got there Jordan was more impressed
with watching the machines working across
the street at Z recycling then our apple adventure.
I promised him we could watch for a while after
we picked some apples so he was on board.
I guess you can't walk out there you have to ride
in a golf cart so that made the trip alot more fun!
I really tried to get a picture of us on the golf cart
but didn't really work out.



We had a very friendly driver who was fun to talk to on our ride out.

When got out there they should where and how to pick the apples
so new ones will grow in next year!
Jordan was all about picking for five seconds 
then he just wanted to sit and eat them. 
Cohen wanted nothing to do with being put on the ground
even with Jordan holding him and feeding him apple.
So our picking experience was rather quick.
I wasn't able to take any pictures but a few quick ones on my phone.




After our ride back we sat in the field so Jordan could 
watch the action at the recycling center.


 We stopped back in the store to find a treat to bring home
and Jordan decided on cookies.
We also stopped for lunch at DQ!



That night I made some stove top Applesauce that Jordan loved!

What you need:
4 apples- peeled, cored and chopped
3/4 cup water
1/4 cup sugar
1/2 tsp. cinnamon

In a saucepan combine apples, water, sugar and cinnamon.
Cover and cook over medium heat for 15 to 20 minutes 
or until apples are soft.
Allow to cool.
Then mash with a fork or potato masher.

Super easy!

ten on ten button

I started my morning at 5:45am.
I had my camera set out to so
I could start documenting right away.
I ended up walking right past it, straight to my shoes, 
and out the door for a walk.

After I returned I quick showered and
got ready for the day.
Then I saw my camera and remembered oh yah
its ten on ten today!

My Kindergarten man

 Jordan officially had his first {full} day of Kindergarten today!
Last week Thursday Jordan went for 45 minutes.
Wasn't long enough for me to get to sad or for it to hit me.
I dropped him off, took some pictures, got home, turned around,
picked him back up, and took more pictures.
He loved it though and was disappointed he didn't get to eat lunch there.
They made crowns and played play dough.
That was all I could get out of him.











On Tuesday he got to go for a few hours in the morning!
I asked if he wanted to ride the bus but he wanted to wait
and ride with Ty on Thursday.
So we ended up riding bikes there.
I had to use Michelle's since mine was hanging up 
and had flat tires.
While trying to capture that perfect picture of Jordan riding to school
with my phone Jordan decided to slow down.
I grabbed the break, which ended up being the front break,
 and crashed right there on the side walk.
I went over the bike and used mainly my right side to break my fall.
I sat there for a good 5 minutes out of embarrassment.
Jordan was sweet and came over to check on me.
He still tells people how I crashed Michelle's bike and broke it.
{i did not break it though}
Anyways, I finally got up, put my phone safely in my pocket, and rode on.
We arrived at school, parked our bikes, and I
had Jordan lead us all the way to his class.
He knew right where to go!
He walked in, hung up his bag, and went right to his spot
at the table. I said goodbye and see you later.
He said a quick bye and that was that.
I enjoyed a few quiet, quick hours at home
and returned crash free on my bike.
When I got there the kids were lining up to
practiced walking in a line out to the front of the building.
I didn't get much out of him on what they did.
I need to ask very direct questions or I get nothing out of him.
He did have fun though and got to go out for recess
where he got hurt but was tough.

Today he got to go for a full school day!
He was so excited to ride the bus to school.
We went out a little early so I could take pictures
and they did some last minute running around.
When the bus came he started walking to get on then last
minute ran back to give me a big hug and say I love you.
He is such a sweet man.
He can definitely drive me bonkers some days
but I really missed him today.
The house is way quieter without him.
I actually teared up after he got on the bus
and was sad that my baby is such a big boy now.
I kept thinking throughout the day I wonder what he 
is doing now. I wish I could have been a fly on the wall to see what he was up to.
I did go on a walk with the kiddos and end up at his school
to see if he was outside playing.
He was not :(

I even wrote down some questions to ask him to 
try and get as much detail as possible!






Here is my little interview with Jordan.

How was your day?  
Good! We had recess 3 times.
I have big news in my bag.
Open back pack, he pulls out lunch, shows me his paper he did,
and his homework.

What did you play at recess?
Monkey bars with Ty and some other friends.
I saw Josiah at lunch recess.
I had recess at 10 o'clock and 12:50.
That was a little one and to get back in line.

How was lunch?
Great!
One man was sitting by me.

Was he there to help you?
I asked him please open my apple juice.

What was your favorite part of your day?
everything

What didn't you like?
nothing

Did you do P.E.?
no

Did you go to library?
yes

Then he asked if he could be done and I said sure.
